Strategic Fit Analysis

A few short questions help us confirm our facility is the right fit. We review it personally and respond, usually the same day.

Tour the facility

Walk the production kitchens, see the layout of the space, the dry and cold storage, and the many amenities.

Health Department orientation

For food businesses, the Department of Health’s assigned agent for our facility meets you here at Cooking Block for a one-on-one orientation, and your license is issued the same day. Maker licenses through other agencies (pet treats, cosmetics) skip this step.

Onboarding & welcome

Sign the kitchen agreement, provide insurance and your deposit, receive your security access — and book your first kitchen hours.

Submit your Fit Analysis and we'll respond promptly.

Your license rides on our infrastructure — not on anything you have to build, buy, or engineer. Issued the same day, right here.

The questions everyone asks

What does it cost?

$25 an hour — every kitchen and the meeting room, any hour of any day. Time, utilities, equipment, cleaning chemicals and dry storage are included.

Is the kitchen really mine?

Yes. One client per kitchen, per booking. Every burner, every oven, all 20 plus linear feet of prep space — exclusively yours.

What is included in my rental?

Every rental comes fully equipped. For cleaning and sanitation: dishwashing stations with detergent and quat mixers, mop stations with floor-chemical mixers, surface sanitizer, and grease-receptacle collection service. For moving product: speed racks and bus carts in every kitchen. And throughout: high-speed internet, an ice machine, and handwashing supplies — with utilities part of the standard rate.

What is not included in my rental?

We do not provide pots, pans, or cooking utensils. These can be kept in your dry storage space. While we supply cleaning chemicals for dishwashing, floor and surface sanitation, we do not supply the cleaning rags. You are responsible for bringing and removing them from the facility.

When can I cook?

Kitchens are available 24/7/365. All kitchen and meeting room bookings are made through our online reservation system, available from your client home page.

What about storage, and can I bring my own equipment?

Every client receives two dry-storage metro shelves complimentary. Cold, frozen and larger dry options are available month to month as you grow, and we also have a temporary storage arrangement for clients that only need cold storage occasionally. Special equipment that does not fit on your dry storage rack can be stored for an extra fee.

How do I get licensed?

For food businesses, the Department of Health’s assigned agent for our facility holds your orientation here, one-on-one, and your license is issued the same day. Makers licensed by another agency — pet treats, cosmetics — skip that step; their path is the agreement, insurance and a deposit.

Can I use Cooking Block as my food truck's commissary?

Yes. Cooking Block is a licensed, Health Department approved commercial kitchen you can name as your commissary and file a San Bernardino County Form B against. Here you can prep and cook, portion and package, wash up at full dish stations, keep product in dry and refrigerated or frozen storage, and take on ice. What we don't offer is truck parking — your vehicle lives elsewhere; you come here to produce, clean and stock. Kitchen time is $25 an hour, any hour, and the kitchen is yours alone while you're in it. Confirm the current requirements for your permit type with the county — they change.

I make something that isn't food — pet treats, balms, personal care. Is this the right door?

Yes, and there's a guide for you: pet treats and personal care. Each explains what we understand governs products like yours, names the agency, and opens the same two-minute fit analysis with the questions that fit a maker.

What happens after I apply?

We read every application personally and reply, usually the same day, with next steps — and a tour, if it looks like a fit.
